Description
VINIFICATION
Crafted from Grenache and Mataro grapes from Frankland River and Shiraz grapes from Margaret River. All were separately harvested, fermented and then matured in select French oak barrels for 7 months, before being blended prior to bottling. The final blend is 42% Grenache 40% Shiraz and 18% Mataro. 20% new French oak was employed to highlight the brightness of the fruit, and the additional usage of seasoned puncheons and barriques perfectly cradle the supple fruit.
TASTING NOTES
Opening with notes of wild strawberry, soft olive tapenade and tangled herbs, this wine doesn’t so much explode into your conscious as it does ‘wafts’. It is gentle and lean (and designed to be so), with one eye on an Australian Christmas and the other on a 3 kilo Porchetta… Notes of black tea and freshly crushed peppercorns are interwoven with red liquorice and sage, all twirling around a robust acid backbone. Hints of charcuterie begin to evolve as the wine opens up in the glass.
