Description
VINIFICATION
Chardonnay grapes from all four clones on the Home Estate (Gin-gin, P58, 95, 227) were hand-picked on the 18th of February 2023, chilled overnight, and then whole bunch pressed the following morning directly into a combination of 25% new and 75% seasoned French oak barriques. A separate block of exceptional P58 clone Chardonnay was harvested on the 25th of February 2023, crushed, and pressed to tank overnight, before racking the following day to seasoned French oak barrels. Indigenous yeast completed both ferments to dryness. The wine was then matured in oak for a further period of 9 months, before blending both barrel batches together in late October, prior to filtering and bottling on 9 November 2023.
TASTING NOTES
An elegant bouquet of Honeysuckle and Meyer lemon spill immediately out of the glass with subtle hints of pineapple and nutmeg swirling backstage. The graceful power of the 2023 vintage is laid bare on the palate, with Senshu apple, Honeydew melon, and soft pineapple all being framed by the wonderful salinity to be expected from this maritime environment. A precise, yet refined, acid backbone carries the length of this wine, holding all elements through to a long finish.
